According to Section 43 of the Infection Protection Act (IfSG), all persons who work with food are required to complete a health briefing before starting work. This is a legal requirement for all catering establishments.

Who in a gastronomy business needs the Belehrung (instruction) under §§ 42, 43 IfSG?
The duty under §§ 42, 43 IfSG attaches to what you actually do, not to your job title. It applies as soon as you handle open, unpackaged food commercially or work with utensils such as dishes, cutlery and cutting boards - so in the kitchen, at the pass, at the dishwashing station, behind the bar and in service. If you only work the till, do the billing or hand out sealed bottles, it usually does not apply. If in doubt, ask your management or the responsible public health office (Gesundheitsamt).
Does this also apply to a Minijob, a trial shift or a seasonal job?
Yes. The law does not ask about your hours or your type of contract, but about whether you work with open food. One weekend at a mulled wine stall counts just as much as a permanent job in a hotel kitchen. The same goes for trial shifts: if you pitch in in the kitchen, the Belehrung has to be done beforehand.
My boss wants the certificate before my first shift - can I still make it?
Usually yes. You do the instruction online whenever it suits you and download the PDF right after you finish. Many people get it done in the evening after work and show the certificate on their phone the next morning at the start of the shift. You can print it as well if your business wants a copy for your personnel file.
I am moving to a different restaurant - do I need a new Belehrung?
No. The Erstbelehrung is issued to you as a person and travels with you, not with the business. Whether you move from breakfast service into event catering or help out in a beer garden over the summer: you show the same certificate everywhere. Your new business then just adds you to its own cycle of Folgebelehrungen.
My job does not start for a few weeks - is the Belehrung still valid then?
No more than three months may pass between the Belehrung and your first day of work with food. So if your season starts in May, do the Belehrung in March rather than in January. If your start date is more than three months later, the business will ask you to repeat the Belehrung before you are allowed near the stove.
Do I have to book the Belehrung here again every two years?
No. Your Erstbelehrung (initial instruction) has no expiry date. The two-yearly refresher, the Folgebelehrung, is the employer's duty under § 43 Abs. 4 IfSG: the business carries it out and documents it for your personnel file. You do not have to buy anything on top - just bring your Erstbelehrung along when you start somewhere new.
Can I register my whole team at once as a business?
Yes. Before the season or a new opening, several temporary staff often start at the same time, so you can register your people in one go. Each person still has to go through the Belehrung themselves, because the certificate is issued in their name and belongs to them afterwards. There is no collective certificate for a team.
The job ad says Hygieneausweis - is that the same thing?
Yes. In the kitchen people say Hygieneausweis or Hygienepass, job ads often say Gesundheitszeugnis (health certificate), and in some regions you will hear rote Karte (red card). It always means the same certificate confirming the Belehrung under §§ 42, 43 IfSG. So you only need one document, whatever word is common in your business.

Health certificate in gastronomy - what you need to know

Gastronomy is the classic case for §§ 42, 43 IfSG. Anyone who prepares, portions, hands out, or serves food needs the instruction before their first day of work. This applies to full-time jobs, temporary jobs, and seasonal work. Bartenders and dishwashers also need it if they work with open food or utensils.

Depending on the business and region, there are different names for the same proof: hygiene instruction for gastronomy, health certificate for cooks, instruction for restaurants, or simply instruction under §§ 42, 43 IfSG. They all mean the same initial instruction - and the same certificate you get here online.

The initial instruction is valid without a time limit. However, under § 43 para. 4 IfSG your employer must repeat the instruction at least every two years and document your participation. You can also complete this follow-up instruction online.
